Microwave Sultana Sponge Pudding

Ingredients:

  • 225g self-raising flour
  • 100g sugar
  • 1 heaped teaspoon baking powder
  • 100g sultanas
  • 225ml water
  • 150ml sunflower oil
  • 2 teaspoons vanilla essence
  • 1 tablespoon golden syrup or treacle (optional)

Method:

  1. Sift the flour, sugar and baking powder into a microwave-proof bowl.
  2. Stir in the sultanas. Next stir in the water, oil and vanilla and mix well.
  3. Add the syrup, if using, to the bowl - it will sink to the bottom of the mixture.
  4. Cover with PVC cling film, piercing a small hole, and cook in the microwave on full power for 7 minutes.
  5. Let stand for 2 minutes and then remove the cling film and serve.
  6. Great with dairy-free custard, Alpro vanilla dessert or soya ice-cream.
