Easiest Cheesecake in the World!


  • 250g vegan digestive biscuits, blended to crumbs
  • 25g margarine, melted
  • 200g silken tofu
  • 750ml vanilla Swedish glace ice-cream
  • 1 large tin mandarin oranges in natural juice
  • 1 packet orange vegan jelly


  1. Preheat oven to 190 degrees celsius.
  2. Mix the biscuit crumbs and melted margarine together in a bowl and press into a flan tin or dish.
  3. Mix together the tofu and ice-cream in a blender and pour into the base.
  4. Bake cheesecake in the oven for 25 minutes until the top is golden. Remove from oven and leave to cool completely.
  5. Mix up the jelly according to the instructions on the packet but only use 200mls of water, plus the juice from the mandarins.
  6. Arrange the mandarin segments on top of the cheesecake and carefully pour the jelly over.
  7. Chill in the fridge until the jelly is completely set.
